Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.

  2. 2

    Press the crust

Press the mixture firmly into the bottom of a greased 9x9 inch baking pan. Bake in the preheated oven for 10 minutes. Remove and let cool.

Filling Preparation

  1. 3

    Make the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in granulated sugar, sour cream, and vanilla extract. Mix until well combined.

  2. 4

    Add eggs

Add the eggs one at a time, mixing well after each addition until the mixture is creamy and smooth.

  3. 5

    Pour and bake

Pour the cheesecake filling over the cooled crust. Spread it evenly and bake in the oven for 25-30 minutes, or until the center is set but still slightly jiggly.

  4. 6

    Cool

Turn off the oven and let the cheesecake squares cool in the oven with the door slightly ajar for about an hour. Then, refrigerate for at least 4 hours or overnight.

Topping Preparation

  1. 7

    Prepare the topping

Just before serving, wash the fresh berries and pat them dry. Toss them lightly with powdered sugar to sweeten.

  2. 8

    Serve

Cut the chilled cheesecake into squares and top with the sweetened berries just before serving.
