Method
Crust Preparation
- 1
Make the Crust
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
- 2
Press the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to pack it down evenly.
- 3
Pre-bake the Crust
Preheat the oven to 350°F (175°C) and bake the crust for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
Cheesecake Filling Preparation
- 4
Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- 5
Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.
- 6
Incorporate Vanilla and Eggs
Add the vanilla extract and beat in the eggs, one at a time, mixing until just combined. Do not overmix.
- 7
Divide the Mixture
Divide the cheesecake filling in half. Stir the melted chocolate into one half until well combined.
- 8
Layer the Batters
Pour spoonfuls of the chocolate mixture and the plain cheesecake mixture into the cooled crust, alternating between the two.
- 9
Swirl the Mixtures
Use a knife or a skewer to gently swirl the two mixtures together for a marbled effect.
- 10
Bake the Cheesecake
Bake in the preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly.
- 11
Cool and Chill
Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
