Method

Preparation

  1. 1

    Prepare the Chicken

Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides with salt, pepper, cumin, and chili powder.

  2. 2

    Chop the Vegetables

Dice the poblano peppers, red bell pepper, onion, and mince the garlic cloves. Set aside.

Cooking

  1. 3

    Cook the Chicken

In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from the skillet and set aside.

  2. 4

    Sauté the Vegetables

In the same skillet, add the diced poblano, red bell pepper, onion, and minced garlic. Sauté for 5-6 minutes or until the vegetables are tender and fragrant.

  3. 5

    Combine and Finish

Slice the cooked chicken breasts and return them to the skillet with the sautéed vegetables. Drizzle with lime juice and toss everything together. Cook for an additional 2-3 minutes to heat through.

Serving

  1. 6

    Garnish and Serve

Remove the skillet from heat. Garnish with chopped fresh cilantro. Serve warm with rice or tortillas, if desired.
