Crust

Method

Crust

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are well coated and resemble wet sand.

  2. 2

    Form the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan, ensuring it is evenly distributed. Bake in the preheated oven for 8-10 minutes until set. Remove from the oven and let it cool slightly.

Filling

  1. 3

    Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 4

    Add Sugar and Flavorings

Add the granulated sugar and vanilla extract to the cream cheese, and beat until well combined, scraping down the sides of the bowl as necessary.

  3. 5

    Incorporate Sour Cream

Add the sour cream to the mixture and beat until smooth.

  4. 6

    Add Eggs

Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

  5. 7

    Bake the Cheesecake

Pour the filling into the cooled crust. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Topping

  1. 8

    Prepare the Berry Topping

In a small bowl, combine the mixed berries, granulated sugar, and lemon juice. Toss gently to coat the berries and allow them to macerate for about 15 minutes.

  2. 9

    Serve the Cheesecake

Once the cheesecake has cooled completely, remove it from the springform pan. Top with the mixed berry topping just before serving.
