Method

Crust Preparation

  1. 1

    Prepare the Crust

In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

  2. 2

    Form the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Use the back of a measuring cup for a compact layer.

  3. 3

    Chill the Crust

Place the crust in the refrigerator to set while you prepare the blueberry ice cream layer.

Blueberry Ice Cream Layer Preparation

  1. 4

    Prepare Blueberry Mixture

In a saucepan, combine blueberries and sugar. Cook over medium heat, stirring occasionally, until the blueberries start to release their juices and the mixture thickens slightly, about 5-7 minutes.

  2. 5

    Blend the Mixture

Remove from heat and let it cool slightly. Blend the blueberry mixture until smooth using an immersion blender or regular blender.

  3. 6

    Mix Cream Ingredients

In a separate bowl, whisk together heavy cream, milk, vanilla extract, and a pinch of salt until well combined.

  4. 7

    Combine Mixtures

Fold the blueberry mixture into the cream mixture until fully incorporated.

  5. 8

    Churn (if applicable)

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. If you don’t have an ice cream maker, pour it into a freezer-safe container.

  6. 9

    Freeze Blueberry Ice Cream

If not using an ice cream maker, stir the mixture every 30 minutes for 2-3 hours until firm.

  7. 10

    Layer Ice Cream

Once the blueberry ice cream is ready, spread it evenly over the chilled crust in the springform pan. Smooth the top with a spatula.

  8. 11

    Freeze the Torte

Cover the torte with plastic wrap and freeze for at least 4 hours or until firm.

Whipped Topping Preparation

  1. 12

    Whip the Cream

In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  2. 13

    Top the Torte

Spread or pipe the whipped cream over the top of the frozen blueberry ice cream layer evenly.

Garnishing

  1. 14

    Add Garnish

Before serving, top the torte with fresh blueberries and mint leaves for decoration.

  2. 15

    Slice and Serve

Remove the torte from the springform pan, slice, and serve immediately.
