Prepare the Chicken
In a bowl, marinate the chicken thighs in buttermilk for at least 1 hour or overnight for best results.

Make the Spice Mix
In a separate bowl, combine flour, cayenne pepper, smoked paprika, garlic powder, salt, and black pepper.

Coat the Chicken
Remove the chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture until fully coated.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Prepare the Sandwich
Spread ghost chili sauce on the bottom half of each burger bun. Place a piece of fried chicken on top, then add bread and butter pickles and leafy greens if desired. Top with the other half of the bun.
