1. Prepare the Beef
Remove the beef tenderloin from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Preheat your oven to 400°F (200°C).
2. Season the Beef
Rub the beef tenderloin with olive oil, then season generously with salt, black pepper, and fresh thyme.
3. Sear the Beef
In a large oven-safe skillet, heat the butter over medium-high heat. Once hot, add the tenderloin and sear for about 3-4 minutes on each side until browned.
4. Cook in Oven
Transfer the skillet to the preheated oven and roast the beef for about 15-20 minutes for medium-rare, or until it reaches your desired doneness.
5. Rest the Meat
Remove the skillet from the oven and transfer the beef to a cutting board. Tent it with foil and let it rest for about 10 minutes.
6. Make the Sauce (optional)
In the same skillet, add minced garlic and cook for 1 minute. Add red wine and beef stock, simmer until reduced by half, scraping up any brown bits from the pan.
7. Carve and Serve
Carve the beef tenderloin tableside and serve with the optional sauce, if prepared.
