Prepare the Filling
In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté minced garlic until fragrant, about 30 seconds. Add fresh spinach and diced red bell pepper, cooking until the spinach is wilted. Remove from heat and mix in provolone cheese. Set aside.

Prepare the Chicken
Preheat your oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through.

Stuff the Chicken
Stuff each chicken breast with the spinach and cheese mixture. Season the outside of the chicken breasts with salt, black pepper, and paprika.

Sear the Chicken
In an oven-safe skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.

Bake in the Oven
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C).

Make the Pan Sauce
Remove the chicken from the skillet and let it rest. Add chicken broth to the skillet, scraping up any browned bits. Simmer for 5 minutes to reduce. Adjust seasoning if necessary.

Serve
Slice the stuffed chicken and drizzle with the pan sauce before serving.
