    Preparation

    Remove the porterhouse steak from the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking.

    Seasoning

    Pat the steak dry with paper towels. Generously season both sides of the steak with salt and black pepper.

    Searing the Steak

    Heat a large skillet or grill pan over high heat. Add olive oil and let it heat up until shimmering. Place the steak in the pan and sear for about 4-5 minutes on one side, without moving it.

    Flipping the Steak

    Flip the steak using tongs and sear the other side for another 4-5 minutes.

    Adding Flavors

    Add minced garlic, chopped rosemary, and butter to the pan. As the butter melts, spoon it over the steak for additional flavor.

    Checking Doneness

    Continue cooking the steak, flipping occasionally and basting with the butter, until it reaches your desired level of doneness (about 130°F for medium-rare, 140°F for medium).

    Remove the steak from the pan and transfer it to a cutting board. Let it rest for 10-15 minutes before slicing.
