Prepare the Poblano Peppers
Roast the poblano peppers over an open flame or in an oven at 400°F (200°C) until the skin is charred. Once charred, place them in a bowl and cover them with plastic wrap for about 10 minutes to steam. Peel off the skin, remove the seeds, and chop the peppers.

Sauté the Vegetables
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the fresh corn kernels to the skillet and stir to combine. Pour in the heavy cream, and season with salt and black pepper. Stir well.
