Ingredients for Murray's French Onion Soup

Method

Directions for Murray's French Onion Soup

  1. 1

    Caramelize the Onions

In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden brown and caramelized, about 30-40 minutes.

  2. 2

    Add Garlic and Broth

Add the minced garlic to the pot and cook for an additional 2 minutes. Pour in the beef broth and white wine, then add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer.

  3. 3

    Simmer the Soup

Reduce the heat to low and let the soup simmer for about 20-30 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.

  4. 4

    Prepare the Croutons

While the soup is simmering, preheat the oven to 375°F (190°C). Place the sliced baguette on a baking sheet, and toast in the oven for about 10 minutes or until golden brown.

  5. 5

    Assemble and Serve

Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle generously with shredded Swiss cheese. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
