Ingredients for Maple Glazed Scallops

Method

Directions for Maple Glazed Scallops

  1. 1

    Prepare the Grits

In a medium pot, bring 4 cups of water to a boil. Stir in the white corn grits and salt. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until creamy and thick. Remove from heat, stir in 1 tablespoon of butter, and set aside.

  2. 2

    Cook the Pancetta

In a skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the pan.

  3. 3

    Make the Maple Sauce

In the same skillet, add the minced garlic to the pancetta fat and sauté until fragrant, about 1 minute. Pour in the maple syrup and bring to a simmer. Let it reduce slightly for about 3-5 minutes until slightly thickened. Remove from heat.

  4. 4

    Sear the Scallops

Pat the scallops dry with paper towels and season with salt and black pepper. In the same skillet, add 1 tablespoon of butter and heat over medium-high heat. Add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through.

  5. 5

    Plate the Dish

To serve, spoon a portion of the creamy grits onto a plate, top with the seared scallops, drizzle with the maple sauce, and sprinkle with crispy pancetta and chopped chives.
