Prepare the Potatoes
Peel the Russet potatoes and grate them using a box grater or food processor. Rinse the grated potatoes in cold water to remove excess starch, then drain and pat dry with a clean kitchen towel.

Prepare the Onion
Finely chop the medium onion.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Cook the Hash Browns
Add the grated potatoes and chopped onion to the skillet. Spread them out evenly and press down with a spatula. Season with salt and black pepper. Cook for about 5-7 minutes until the bottom is golden brown and crispy. Flip the hash browns over in sections and cook for an additional 5-7 minutes until the other side is golden and crispy.
