    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thin slices or sticks, about 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch. Pat them dry with a clean kitchen towel.

    Soak the Potatoes

    Soak the cut potatoes in a bowl of cold water for at least 30 minutes. This helps to remove more starch and makes the fries crispier.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Fry the Potatoes

    Carefully add a handful of soaked and dried potato sticks to the hot oil. Do not overcrowd the pot. Fry them for about 5-7 minutes or until golden brown. Remove with a slotted spoon and let drain on paper towels.
