    Prepare the Steak

    Take the filet of beef out of the refrigerator and let it rest at room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub the steak with olive oil, then season generously with salt and black pepper. If using, sprinkle fresh rosemary on top.

    Sear the Steak

    Preheat a skillet or grill over high heat. Once hot, add the filet and sear for about 4-5 minutes on one side until a nice crust forms.

    Finish Cooking

    Flip the steak and add butter to the skillet. Cook for another 4-5 minutes or until it reaches your desired doneness (about 130°F for medium-rare).

    Remove the filet from the skillet and let it rest for 5 minutes before slicing. This allows the juices to redistribute.
