Preheat the oven
Preheat your oven to 375°F (190°C).

Prepare the potatoes
Peel and slice the potatoes thinly, about 1/8 inch thick. Rinse them under cold water and pat dry.

Make the cream mixture
In a saucepan, heat the heavy cream and minced garlic over medium heat until just simmering. Remove from heat and season with salt, black pepper, and paprika.

Layer the potatoes
In a greased baking dish, layer half of the sliced potatoes, then pour half of the cream mixture over them. Sprinkle with one cup of grated cheddar cheese.

Repeat layers
Add the remaining potatoes on top, pour the rest of the cream mixture over, and finish with the remaining cheddar cheese.

Bake
Dot the top with butter and cover the dish with aluminum foil. Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
