Prepare Filling
In a mixing bowl, combine the corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing. Mix well until all ingredients are evenly distributed.

Prepare Wrappers
Lay out a spring roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the filling mixture near the corner.
Rolling

Roll the Spring Roll
Fold the corner over the filling, then fold in the sides, and roll tightly away from you. Seal the edge with a little water to keep it closed. Repeat with the remaining wrappers and filling.
Frying

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot (approximately 350°F or 175°C).

Fry the Spring Rolls
Carefully add the spring rolls to the hot oil, frying them in batches until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

Serve the Reuben Spring Rolls hot with extra Thousand Island dressing on the side for dipping.
