Crust Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix crust ingredients

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated.

  3. 3

    Form the crust

Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the bottom of a measuring cup or glass to ensure it is compact.

  4. 4

    Bake the crust

Bake in the preheated oven for 8-10 minutes, until lightly golden. Remove from oven and let cool.

Filling Preparation

  1. 5

    Mix filling ingredients

In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until well blended.

  2. 6

    Fill the crust

Pour the filling into the cooled graham cracker crust, smoothing it out with a spatula.

  3. 7

    Bake the pie

Bake the pie in the oven for 10-12 minutes, until the filling is set but still slightly jiggly in the center.

  4. 8

    Cool the pie

Remove from oven and let cool to room temperature. Then refrigerate for at least 3 hours before serving.

Topping Preparation

  1. 9

    Whip the cream

In a mixing bowl, combine the heavy whipping cream and powdered sugar. Use a hand mixer or stand mixer to whip until soft peaks form.

  2. 10

    Top the pie

Once the pie is fully chilled, spread or pipe the whipped cream over the top of the pie.

  3. 11

    Garnish

Sprinkle lime zest over the whipped cream for garnish.
