For the Grilled Salmon

    Prepare the Marinade

    In a small bowl, mix together olive oil, minced garlic, lemon juice, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well coated. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place on the grill. Cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork.

For the Seasonal Vegetables

    Prepare the Vegetables

    Wash and slice the zucchini and bell peppers into thin strips. Trim the asparagus ends.

    Season the Vegetables

    In a bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

    Grill the Vegetables

    Place the seasoned vegetables on the grill (or in a grill basket) and cook for about 6-8 minutes, or until tender and slightly charred, turning occasionally.

For the Lemon Butter Sauce

    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter.

    Add Lemon and Seasoning

    Once melted, stir in lemon juice, chopped parsley, salt, and black pepper. Cook for an additional 1-2 minutes until warmed through.
