    Prepare the Tomatoes

    Wash the green tomatoes and slice them into 1/2-inch thick slices. Sprinkle salt on both sides of the slices and let them sit for about 10 minutes to draw out excess moisture.

    Set Up Breading Station

    In three separate shallow dishes, place the flour in the first, whisk together the eggs and milk in the second, and the cornmeal with black pepper, cayenne pepper, and additional salt in the third.

    Bread the Tomatoes

    Dip each tomato slice into the flour first, ensuring it is fully coated. Then, dip it into the egg mixture, allowing excess to drip off. Finally, coat the slice in the seasoned cornmeal, pressing gently to adhere.

    Fry the Tomatoes

    In a large skillet, heat vegetable oil over medium-high heat. Once the oil is hot, carefully place the breaded tomato slices in the skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown. Remove and place on a paper towel-lined plate to drain excess oil.

    In a medium bowl, combine mayonnaise, Dijon mustard, hot sauce, minced garlic, chopped capers, paprika, and lemon juice. Mix well until all ingredients are thoroughly combined.

    Taste the remoulade sauce and add salt to taste. Mix again to incorporate the salt.
