Fish Preparation

Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, mixing until the batter is smooth and has no lumps.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Coat the Cod
Dip each cod fillet into the batter, ensuring it is completely coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil, frying them in batches if necessary. Cook for 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries. Rinse them in cold water to remove excess starch.

In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato fries to the hot oil in batches. Fry for about 5-7 minutes until golden and crispy. Remove and drain on paper towels. Sprinkle with salt while hot.

In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, and lemon juice. Mix well.

Taste the tartar sauce and season with salt and black pepper to taste. Mix again and refrigerate until ready to serve.
