Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until golden. Remove from oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar, beating until well combined.

Add Remaining Ingredients
Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until smooth and fully incorporated.

Bake the Cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake in the oven for 1 hour.

Cool the Cheesecake
Remove the cheesecake from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Prepare the Berry Topping
In a medium bowl, toss the fresh mixed berries with granulated sugar and lemon juice. Let sit for about 15 minutes to allow the juices to release.

Serve the Cheesecake
Once the cheesecake is chilled, remove it from the springform pan. Top with the prepared berry mixture before serving.
