Rinse the sea scallops under cold water and pat them dry with paper towels. This helps to ensure they sear properly.

Wrap the Scallops
Take each slice of bacon and cut it in half. Wrap each half slice around a scallop, securing it with a toothpick if necessary. Repeat until all scallops are wrapped.
Make the Glaze

In a small bowl, mix together honey, chipotle powder, soy sauce, lime juice, minced garlic, salt, and black pepper until well combined.

Set the glaze aside to allow the flavors to meld while you prepare to cook the scallops.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Arrange on Baking Sheet
Place the wrapped scallops on a baking sheet lined with parchment paper or a silicone mat, ensuring they are not touching.

Bake in the preheated oven for 15 to 20 minutes, or until the bacon is crispy and the scallops are opaque and cooked through. You can turn on the broiler for the last 2-3 minutes for extra crispiness.
