Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, combine flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out biscuits. Place on a baking sheet and bake for 12-15 minutes until golden.

Prepare the Gravy
In a skillet, cook the ground sausage over medium heat until browned. Sprinkle the flour over the sausage and stir for 1-2 minutes to cook the flour. Gradually add the milk, stirring continuously until the gravy thickens. Season with salt, black pepper, and red pepper flakes.

Serve
Split the biscuits in half and spoon the gravy over the top. Serve warm.
