Preparing the Soft Shell Crabs

Clean the Soft Shell Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and any other inedible parts.

Prepare the Breading
In a bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper.

Prepare the Egg Mixture
In another bowl, whisk together the eggs and buttermilk until well combined.
Frying the Soft Shell Crabs

Heat the Oil
In a deep frying pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Crabs
Carefully lower the breaded crabs into the hot oil. Fry them for about 3-4 minutes on each side until they are golden brown and crispy.

Drain the Crabs
Remove the crabs from the oil and let them drain on paper towels to absorb excess oil.
Assembling the Po Boy

Prepare the Rolls
Slice the French rolls or hoagie buns lengthwise but do not cut all the way through.

Add the Toppings
Spread a generous amount of spicy mayo on the inside of each roll. Layer with shredded lettuce, sliced tomatoes, and pickles.

Add the Soft Shell Crabs
Place one fried soft shell crab into each roll on top of the toppings.

Serve with Sides
Serve the Po Boys alongside a side of French fries.
