Method

Preparation

1

Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it is hot enough for baking the lava cakes.

2

Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust them lightly with flour. This will help the cakes release easily after baking.

Making the Batter

3

Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

4

Whisk Eggs and Sugar

In a separate mixing bowl, whisk together the large eggs and granulated sugar until the mixture is pale and slightly thickened.

5

Combine Mixtures

Pour the melted chocolate and butter mixture into the egg and sugar mixture. Add vanilla extract and a pinch of salt. Stir until fully combined.

6

Add Flour

Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Baking

7

Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

8

Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

9

Cool Slightly

Remove from the oven and let the cakes cool for 1 minute. Run a knife around the edges to loosen, then invert onto plates.

Serving

10

Plate and Serve

Serve the warm chocolate lava cakes immediately, topped with a scoop of vanilla ice cream, fresh raspberries, and a dusting of powdered sugar.
