Prepare the Crab Filling

1. Mix the Filling

In a mixing bowl, combine the crab meat, cream cheese, mayonnaise, finely chopped green onions, garlic powder, Old Bay seasoning, lemon juice, salt, and black pepper. Mix well until all ingredients are well combined and smooth.

Prepare the Crust

2. Preheat the Oven

Preheat your oven to 200°C (400°F).

3. Roll out the Puff Pastry

On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thickness.

4. Cut the Pastry

Using a knife or a pizza cutter, cut the pastry into squares or circles, depending on your preference.

Assemble the Crab Puffs

5. Fill the Pastry

Place a spoonful of the crab filling in the center of each pastry square or circle.

6. Seal the Pastry

Fold the pastry over the filling to create a pocket. Press the edges to seal tightly. Use a fork to crimp the edges for an extra seal.

7. Prepare for Baking

Beat the egg in a small bowl and brush the egg wash over the tops of the sealed pastries. Sprinkle sesame seeds on top.

Bake the Crab Puffs

Place the assembled crab puffs on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until golden brown.

9. Cool and Serve
