Fried Oysters Preparation

Prepare the Breading
In three separate bowls, place the flour in one, the buttermilk and eggs (whisked together) in the second, and the cornmeal mixed with salt, black pepper, and cayenne pepper in the third.

Coat the Oysters
Dip each oyster first in the flour, ensuring a light coating, then in the buttermilk mixture, and finally in the cornmeal mixture, ensuring they are well-coated.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully add the coated oysters to the hot oil, frying them in batches if necessary to avoid overcrowding. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Bread
Slice the French bread or hoagie rolls lengthwise, without cutting all the way through, creating a pocket for the fillings.

Layer the Ingredients
Spread a generous amount of spicy mayo on the inside of the bread. Add the shredded lettuce, sliced pickles, sliced tomatoes, and finally, the fried oysters.

Serve with Fries
Serve the Po Boy immediately with a side of fries.
