Preparing the Chicken Tenders

Marinate the Chicken
Cut the chicken breast into strips and place them in a bowl. Pour the buttermilk over the chicken to fully coat it. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Flour Mixture
In a shallow bowl, mix together the flour, salt, black pepper, paprika, garlic powder, and onion powder.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it is fully coated.

Fry the Chicken
Carefully place the breaded chicken tenders into the hot oil. Fry in batches to avoid overcrowding. Cook for 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
Making the Spicy Mayo

Combine Ingredients
In a bowl, mix together the mayonnaise, hot sauce, and lemon juice until well combined.
Assembling the Po Boy

Prepare the Bread
Split the French bread or Po Boy rolls lengthwise without cutting all the way through.

Add the Chicken
Place two fried chicken tenders inside each roll.

Top with Vegetables
Add a layer of lettuce, followed by pickles and slices of tomato on top of the chicken.

Spread Spicy Mayo
Generously spread the spicy mayo on the inside of the top half of the roll.

Serve with Fries
Serve the sandwich immediately with a side of fries.
