Preparing the Catfish

Soak the Catfish
In a bowl, soak the catfish filets in buttermilk for at least 30 minutes. This helps tenderize the fish and adds flavor.

Prepare the Breading
In a shallow dish, mix together the cornmeal, flour, cajun seasoning, salt, and black pepper.

Coat the Catfish
Remove the catfish from the buttermilk and let excess drip off. Dredge each filet in the cornmeal mixture, ensuring they are well-coated.
Frying the Catfish

Heat the Oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish filets in the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Po Boy

Prepare the Bread
Slice the French bread hoagie rolls lengthwise without cutting all the way through.

Spread a generous amount of spicy mayo on the inside of each roll. Place the fried catfish filets inside the rolls, then top with shredded lettuce, sliced pickles, and sliced tomatoes.
