Preparing the Chips

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips, about 1/2 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    First Fry

    In a deep pot, heat vegetable oil to 325°F (160°C). Fry the potatoes in batches for about 4-5 minutes or until they are soft but not browned. Remove and drain on paper towels.

    Make the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cold sparkling water until smooth and lump-free.

    Pat the fish fillets dry with paper towels and season both sides with salt and black pepper.

    Increase the oil temperature to 375°F (190°C). Dip each fish fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for 4-6 minutes, or until golden and crispy. Remove and drain on paper towels.

Finishing the Chips

    Raise the oil temperature back to 375°F (190°C). Fry the pre-cooked potatoes again in batches for 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

    Serve the crispy fish alongside the golden chips. Add malt vinegar, tartar sauce, and lemon wedges on the side.
