Preparation of Seafood

In a large bowl, rinse the shrimp, catfish, and oysters under cold water and pat them dry with paper towels.

Make the Batter
In a shallow bowl, combine the all-purpose flour, cornmeal, salt, black pepper, paprika, and garlic powder. In another bowl, beat the eggs and mix with milk until well combined.

Coat the Seafood
Dip each piece of seafood first into the egg mixture and then coat with the flour mixture, pressing slightly to adhere the batter.
Frying

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the battered shrimp, catfish, and oysters to the hot oil, cooking in batches if necessary to avoid overcrowding.

Fry for about 3-4 minutes or until the seafood is golden brown and cooked through. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
Serving

Serve the fried seafood hot with cocktail sauce and tartar sauce on the side. Accompany with fries.
