Calamari Preparation

Clean the Squid
Rinse the fresh squid under cold running water. Remove the head and innards, then peel off the skin. Cut the body into rings about 1/2 inch thick.

Marinate the Squid
Place the squid rings in a bowl and pour the buttermilk over them. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Remove the squid from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, shaking off excess flour. Fry in batches for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

In a small bowl, combine mayonnaise, Sriracha sauce, and lemon juice. Stir until well blended.
