    Prepare the Potatoes

    Wash and scrub the Russet potatoes thoroughly under cold running water to remove any dirt. Pat them dry with a towel.

    Cut the Potatoes

    Using a sharp knife, cut each potato into thin strips (about 1/4 inch thick) to form fries. Aim for uniformity for even cooking.

    Soak the Fries

    Place the cut fries into a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.

    Drain and Dry

    After soaking, drain the fries and lay them out on a clean kitchen towel or paper towels. Pat them dry completely to remove excess moisture.

    Heat the Oil

    In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy, as maintaining the right temperature is key to crispy fries.

    Carefully add a handful of dried fries into the hot oil, being cautious not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.
