Method
Preparation
- 1
Clean the Clams
Rinse the clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
Cooking
- 2
Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.
- 3
Add the Wine
Pour in the white wine and bring to a simmer. Allow it to cook for about 2-3 minutes to reduce slightly.
- 4
Cook the Clams
Add the cleaned clams to the skillet. Cover and cook for 5-7 minutes, or until the clams have opened. Discard any clams that remain closed.
- 5
Finish the Sauce
Stir in the chopped parsley, red pepper flakes, salt, and black pepper. Mix well and cook for an additional minute.
- 6
Serve
Remove from heat and serve the clams in a bowl with the sauce poured over. Enjoy with crusty bread to soak up the sauce!
