Preparation

Preparing the Chimichurri Sauce

1. Make the Chimichurri

In a medium bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, salt, black pepper, and red pepper flakes. Mix well and set aside to let the flavors meld.

Cooking the Steak and Fries

2. Cook the Fries

Prepare fries according to package instructions or make fresh fries. Set aside and keep warm.

3. Cook the Steak

Preheat a skillet or grill over medium-high heat. Season the sirloin with salt and black pepper. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let it rest for a few minutes before slicing.

On a plate, place a handful of arugula. Slice the steak and place it on top of the arugula. Drizzle generously with chimichurri sauce and serve alongside the fries.
