Blackened Mahi Mahi Recipe

    Prepare the Mahi Mahi

    Rub the Cajun seasoning evenly over both sides of the Mahi Mahi fillets. Heat olive oil in a skillet over medium-high heat.

    Cook the Fish

    Add the seasoned Mahi Mahi fillets to the hot skillet. Cook for about 4-5 minutes on each side or until the fish is cooked through and has a blackened crust. Remove from skillet and set aside.

Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain.

    Mash the Potatoes

    Return the potatoes to the pot, add butter, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Chorizo and Corn

    Cook the Chorizo

    In the same skillet used for the fish, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant. Add chorizo and cook until browned, about 5 minutes.

    Add Corn

    Stir in the corn kernels and cook for an additional 3-4 minutes. Remove from heat and stir in chopped cilantro.

Assembly

    Plate the Dish

    On each plate, serve a portion of mashed potatoes, topped with the blackened Mahi Mahi fillet, and spoon the chorizo and corn mixture on the side.
