Method
Marinating the Tofu

Prepare the Tofu
Drain the firm tofu and press it between paper towels to remove excess moisture. Cut the tofu into bite-sized cubes.

Make the Marinade
In a mixing bowl, combine soy sauce, olive oil, maple syrup, minced garlic, and grated ginger.

Marinate the Tofu
Add the tofu cubes to the marinade and gently toss to coat. Let it marinate for at least 30 minutes or up to overnight in the refrigerator.
Cooking the Shiitake Mushrooms

Add Soy Sauce
Add soy sauce and chopped green onions to the mushrooms and stir well. Cook for an additional 2 minutes, then remove from heat.
Assembling the Bowl

Prepare the Base
In a large bowl, start with a base of cooked quinoa or brown rice.

Add Greens
Layer on the fresh spinach or mixed greens on top of the grains.

Add Tofu and Mushrooms
Remove the marinated tofu from the refrigerator and cook it in a non-stick skillet over medium heat until golden and crispy, about 10 minutes. Add the sautéed shiitake mushrooms on top of the greens.

Top with Fresh Ingredients
Add sliced avocado, halved cherry tomatoes, diced cucumber, and sprinkle sesame seeds over the top.
