Prepare Sushi Rice
Rinse and Cook the Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.25 cups of water in a rice cooker. Cook according to the rice cooker instructions or boil in a pot, then simmer covered for 20 minutes.
Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a separate small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 0.5 teaspoon of salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Let it cool to room temperature.
Prepare Filling
Mix the Tuna Filling
In a medium bowl, combine 1 cup of drained canned tuna, 2 tablespoons of sriracha sauce, 1 tablespoon of mayonnaise, 2 tablespoons of chopped green onions, and 0.5 teaspoon of sesame oil. Mix well until everything is evenly combined.
Assemble Sushi Rolls
Lay Out the Nori
Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.
Spread the Rice
Wet your hands to prevent sticking. Take a handful of the sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top edge.
Roll the Sushi
Using the bamboo mat, roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water if necessary.
Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi on the side.
