Prepare the Beef
Rub the beef roast with olive oil, salt, black pepper, and dried thyme. Make sure it is evenly coated.
Sear the Roast
In a large skillet over medium-high heat, sear the beef roast on all sides until browned, about 3-4 minutes per side.
Cook the Roast
Transfer the beef roast to a slow cooker. Add the sliced onion, minced garlic, bay leaves, and beef broth. Cover and cook on low for 8-10 hours or until the meat is tender and easily shredded.
Shred the Beef
Once cooked, remove the beef roast from the slow cooker and let it rest for 10 minutes. Shred the beef using two forks.
Strain the Broth
Strain the remaining broth through a fine-mesh sieve to remove solids and return to the slow cooker to keep warm.

Prepare the Rolls
While the beef is resting, preheat your oven to 350°F (175°C). Cut the French rolls or baguettes in half lengthwise.
Assemble the Sandwich
Layer the shredded beef on the bottom half of each roll. Top with two slices of provolone cheese.
Melt the Cheese
Place the assembled sandwiches on a baking sheet and bake in the preheated oven for 5-7 minutes, or until the cheese is melted and the bread is toasted.
Serve with Broth
Sprinkle the chopped parsley over the sandwiches and serve with warm beef broth for dipping.
