Tuna and Avocado

Method

Prepare Sushi Rice

    Rinse the Rice

    In a medium bowl, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Combine the rinsed sushi rice and water in a rice cooker. Cook according to the rice cooker's instructions. If using a pot, bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

    Season the Rice

    Once cooked, let the rice sit for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice, being careful not to mash it.

Prepare Tuna and Avocado

    Slice the Tuna

    Using a sharp knife, slice the sushi grade tuna into thin, even slices.

    Prepare the Avocado

    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork or slice into thin pieces.

    Mix Soy Sauce and Wasabi

    In a small bowl, mix the soy sauce with wasabi to taste. Adjust according to your preference.

Assemble the Sushi Stack

    Layer Ingredients

    In a small round mold (or using a glass), layer sushi rice at the bottom, followed by a layer of sliced tuna, and then a layer of avocado. Press down gently to compact the layers.

    Repeat Layers

    Repeat the layering until the mold is full, finishing with a layer of avocado on top.

    Remove Mold and Garnish

    Carefully remove the mold and place the sushi stack on a plate. Garnish with prawn crackers around the stack, and sprinkle sesame seeds and chopped green onions on top if desired.
