Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold running water until the water runs clear. This helps remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Preparing Tuna Filling

    Mix the Filling

    In a mixing bowl, combine the drained tuna, mayonnaise, soy sauce, sesame oil, sriracha, and chopped green onions. Mix until well combined.

Assembling Sushi Rolls

    Prepare the Nori

    Lay a sheet of nori on a bamboo sushi mat or a clean cutting board, shiny side down.

    Spread the Rice

    Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge free of rice.

    Add the Filling

    Place a line of the tuna mixture along the center of the rice. Add slices of cucumber and avocado on top of the tuna.

    Roll the Sushi

    Starting from the bottom edge of the mat, carefully lift it and roll it towards the top edge while gently pressing down to shape the roll. Make sure to roll tightly but not too tight to avoid squishing the ingredients.

    Seal the Roll

    Moisten the top edge of the nori with a little water to seal the roll. Use a sharp knife to slice the roll into 6-8 pieces.

    Garnish and Serve

    Sprinkle sesame seeds on top and serve with wasabi and pickled ginger on the side.
