Preparation

Prep the vegetables
Wash and dry the lettuce leaves. Peel the carrot and cucumber, then julienne the carrot and slice the cucumber and red bell pepper into thin strips. Chop the green onions finely.

Prepare the tofu
Drain the firm tofu and press it gently to remove excess moisture. Cut the tofu into small cubes.

Cook the tofu
In a non-stick skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger; sauté until fragrant, about 1 minute. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes.

Add sauce
Pour the soy sauce, rice vinegar, chili paste, and honey or maple syrup over the cooked tofu. Stir gently to combine and cook for an additional 2-3 minutes until heated through.
Assembly

Assemble the wraps
Take a lettuce leaf and spoon a portion of the tofu mixture into the center. Top with julienned carrot, cucumber, red bell pepper, and chopped green onions.

Garnish
Sprinkle sesame seeds and fresh cilantro on top of the filled lettuce wraps. Serve immediately.
