Salad Base
Italian Vinaigrette
Method
Prepare Salad Base
- 1
Wash and Chop Greens
Rinse the mixed greens under cold water, then spin dry in a salad spinner. Tear larger leaves into bite-sized pieces and place in a large salad bowl.
- 2
Slice Cucumber
Peel the cucumber if desired, then slice it thinly. Add the cucumber slices to the salad bowl with the greens.
- 3
Prepare Avocado
Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into cubes and add to the salad bowl.
- 4
Slice Strawberries
Remove the stems from the strawberries and slice them into quarters. Add to the salad bowl.
- 5
Grate Aged Cheddar
Use a cheese grater to shred the aged cheddar cheese. Sprinkle it over the salad.
- 6
Add Roasted Seeds and Quinoa
Sprinkle the roasted seeds and cooked quinoa over the salad. Gently toss the salad ingredients to combine.
Make Italian Vinaigrette
- 7
Combine Ingredients
In a small bowl or jar, combine the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper.
- 8
Whisk or Shake
Whisk the mixture together until fully combined or cover the jar and shake well until emulsified.
Dress the Salad
- 9
Add Vinaigrette
Drizzle the Italian vinaigrette over the salad just before serving.
- 10
Toss to Combine
Gently toss the salad to ensure the vinaigrette coats all the ingredients evenly.
