    Prepare the Potatoes

    Wash the russet potatoes thoroughly under cold water. Peel them if preferred, then cut them into long, thin strips (about 1/4 inch thick) to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of the dried fries to the hot oil. Fry in batches for about 5-7 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt immediately.

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes before cooking.

    Rub both sides of the steaks with olive oil, then season generously with salt and black pepper.

    Cook the Steak

    Heat a cast-iron skillet or grill over high heat until it’s very hot. Add the steaks and cook for about 4-5 minutes on one side without moving them.

    Add Aromatics

    Flip the steaks and add crushed garlic cloves and fresh thyme to the skillet. Cook for an additional 4-5 minutes for medium-rare, basting the steaks with the melted fat and aromatics.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Serving

    Plate the Dish

    Slice the rested steaks against the grain and serve alongside the hot frites. Optionally, garnish with fresh parsley and offer mayonnaise on the side for dipping.
