Marinate the Steak
In a large bowl, combine the olive oil, soy sauce, garlic powder, black pepper, salt, Worcestershire sauce, and lemon juice. Whisk until well mixed. Cut the sirloin steak into bite-sized cubes and add them to the marinade. Toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Cook the Steak Bites
Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated steak cubes in a single layer (you may need to do this in batches). Sear the steak bites for about 2-3 minutes on each side until they are browned and cooked to your desired doneness (medium-rare is approximately 130°F). Remove from the heat and let rest for a few minutes.

Make the Aioli
In a small bowl, mix together the mayonnaise, Dijon mustard, horseradish sauce, and lemon juice. Add the minced garlic and stir until well combined. Season with salt and black pepper to taste. Adjust the flavors according to your preference. Refrigerate until ready to serve.

Once the steak bites have rested, serve them hot on a platter with the Dijon horseradish aioli on the side for dipping.
