    Prepare the Home Fries

    Wash and peel the potatoes. Cut them into small cubes. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the cubed potatoes, season with salt and pepper, and cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes.

    Roast the Tomato

    Preheat the oven to 400°F (200°C). Cut the tomato in half and place it on a baking sheet, cut side up. Drizzle with olive oil, season with salt and pepper, and roast in the oven for about 15 minutes until soft and slightly caramelized.

Cooking the Steak and Eggs

    Cook the Steak

    Season the prime sirloin with salt and pepper. In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes before slicing.

    Cook the Eggs

    In the same skillet, reduce heat to medium. Crack the eggs into the skillet and cook to your liking (sunny-side up, over-easy, etc.), about 3-4 minutes for sunny-side up. Season with salt and pepper.

Serving

    Plate the Dish

    On a plate, arrange the sliced steak, home fries, cooked eggs, and roasted tomato. Serve with slices of multi-grain toast on the side.
