Sauté Vegetables
In the same skillet with a bit of bacon grease, add the diced red and green bell peppers and chopped green onions. Sauté for about 3-4 minutes until they are softened.

Add Cheese and Bacon
Sprinkle the shredded mixed cheese and chopped bacon evenly over one half of the omelet. Allow it to cook for another 2-3 minutes until the cheese melts.

Fold and Serve
Carefully fold the omelet in half over the filling and slide onto a plate. Serve hot.

Sauté Potatoes
Cook the potatoes for about 15-20 minutes, stirring occasionally, until golden brown and crispy on the outside and tender inside. Adjust seasoning as desired.
