Make the crust
In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

Form the crust
Press the mixture firmly into the bottom of a 6-inch springform pan to form an even layer. Use the back of a measuring cup for a flat surface.

Pre-bake the crust
Preheat your oven to 350°F (175°C). Bake the crust for about 8-10 minutes, until lightly golden. Let it cool while preparing the filling.
Cheesecake Filling Preparation

Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Mix in sugar and sour cream
Gradually add the granulated sugar and sour cream, mixing until fully combined and smooth.

Add vanilla and eggs
Mix in the vanilla extract. Then, one at a time, add the eggs, mixing on low speed until just combined after each addition.

Pour filling into crust
Carefully pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

Bake the cheesecake
Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
Salted Caramel Sauce Preparation

Make the caramel
In a medium saucepan over medium heat, add the granulated sugar. Stir constantly until the sugar melts into a golden-brown liquid.

Add butter
Once melted, carefully add the unsalted butter and stir until completely melted and combined.

Incorporate cream and salt
Slowly pour in the heavy cream while stirring. The mixture will bubble up. Keep stirring until smooth, then remove from heat and stir in the sea salt.

Cool the caramel
Let the salted caramel sauce cool slightly before drizzling it over the chilled cheesecake.
