Mix Dough Ingredients
In a mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water, stirring with a fork until the dough starts to come together.

Knead the Dough
Transfer the dough to a lightly floured surface. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

In a large bowl, combine the ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

Roll Out Dough
After the dough has rested, divide it into 2 portions. Roll out one portion on a floured surface to about 1/8 inch thickness. Cut into 3-inch circles using a cookie cutter or glass.

Place a teaspoon of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges tightly to seal.

Cook the Potstickers
In a large skillet, heat vegetable oil over medium heat. Place the potstickers in the skillet, flat side down. Cook for 2-3 minutes until the bottoms are golden brown.

Carefully add 1 cup of water to the skillet, cover immediately, and let steam for about 5-7 minutes until the water has evaporated and the potstickers are cooked through.
